Masashi Kishimoto ( Naruto ), Hayao Miyazaki ( Nausicaa of the Valley of the Wind, Spirited Away, Princess Mononoke.... ), and whoever that guy's called who made Cowboy Bebop... and while I'm at it, the authors of Full Metal Alchemist and maybe Fruits Basket, too!
( It's so darn hard for me to memorize these Japanese names, it's got to mean something when I do manage. =O )

..but if I have to pick one as an artist, probably Miyazaki. Beats the Grimm brothers or Disney any day.

YES! These folks are on my list. Also, I'm adding in whoever worked on Maui Mallard, Don Rosa, the artists for PKNA, Whatshername who made Ranma, Who ever did Saiyuki, and a few others I can't think the names of right on the top of my head
Oh, and Walt Disney. The old disney character designs were awesome.
